Way to go on the Salmon with White Wine Sauce recipe. I was so happy with how it turned out. Pick out a good white wine and stop at the fish market for 1 large salmon fillet and you need one cup chardonnay. It is easy from here. Place the wine, water, parsley, dill and chardonnay in a large skillet over medium heat. Add the salmon, skin side down. Cover and simmer until the fish flakes easily with fork, about 10 minutes. Remove salmon to platter and keep warm. For the chardonnay sauce, mix the wine, half and half and herbs together in a sauce pan. Cook over medium heat, stirring constantly just until hot and do not boil. Take half of hot mixture and slowly add to beaten egg yolk. Add then to the rest of the hot mixture into the saucepan. Whisk in cornstarch. Heat to boiling, stirring constantly. Boil for 1-2 minutes until sauce thickens and pour over salmon and serve. You will need plenty of chilled white wine.
